I waxed poetically about the Norwegian banana cake – more of a banana bread than cake – but I get it… That recipe is perhaps too sweet for some. So, in the name of fair and balanced, here is one for a more conventional banana bread. It’s loosely based on America’s Test Kitchen’s recipe and should take no more than an hour to bake, prep time included.
The bake should come out like this:
You can avoid the banana clusters if you mash the mixture more smoothly, but, really, you don’t want to cheat yourself out of that pungent potassium punch.
